This is very simple and easy to prepare vegetable soup.
Tomato soup is a very simple, tasty and healthy food that is easy to prepare. Tomato soup does not have a strict recipe, it can vary with your favorite products. If desired, you can add your favorite herbs and spices, vegetables, meat, legumes or croutons to the soup. Serves both cold and hot. Tomato soup is usually served with white bread croutons, cream or fried cheese.
Tomato puree soup
- Tomatoes – 300 g.
- Onion – 1 pc.
- Olive oil – 20 g.
- Salt to taste.
- Ground black pepper.
- Greens and spices to taste.
- Basil – 2 leaves.
For soup meat you need to take tomatoes with thick grains and thin skins. Make two deep cross-shaped shapes on top of the tomato. Place the tomatoes in a bowl and cover completely with boiling water. Leave on for 1 minute, then rinse with cold water. This helps to remove the skin easily. Peel a squash, grate it and cut it into small cubes. Finely chop the onion and sauté in olive oil over low heat.
Add the tomatoes to the onion, sauté over medium heat until all the liquid has evaporated. Pour salt, pepper soup, 1.5 cups hot water. If the soup is sour, add some sugar. Cook the soup on low heat for 15 minutes. Alternatively, add dried Provencal herbs, dried basil, oregano and other spices. Pour the soup into the saucepan and mix. Pour into bowls and garnish with chopped basil. It can be served with cream or croutons.
Tomato soup with meatballs
- Meat Soup – 2 lbs.
- Tomato juice – 1 liter.
- Garlic – 2 cloves
- Eucalyptus leaf – 4 pcs .;
- Onions – 2 pcs .;
- Chicken eggs – 1 pc.
- Chopped parsley.
- Spices to taste.
- Beef – 300 g
- Potatoes – 2 pieces
- Carrots – 1 piece
- Canned white beans – 1 l
- Ground black pepper.
Pour olive oil into a saucepan, add tomato juice. Cook for 5 minutes, add bay leaf, chopped garlic, salt and pepper. Set the lid on and off for 2 more minutes. For meatballs, mix meat, chopped onion, raw egg and chopped greens. Mix, salt and pepper, create meatballs. Bring the soup to a boil and place the meatballs, add the peppercorns and bay leaf.
Cut the potatoes into cubes, place in the soup. Cook for 30 minutes. Alternatively, add fresh or canned beans to the soup. Finely chop the onion, chop the carrots, grease the vegetables with olive oil and place in the soup. Finally add the tomato juice to the soup, strain it after boiling. Leave the soup to soak for 30 minutes.
Tomato soup with pasta and vegetables
- Tomatoes – 200 g.
- Bulgarian pepper – 1 pc.
- Potatoes – 3 pcs .;
- Onion – 1 pc.
- Garlic – 3 cloves
- Carrots – 1 pc.
- Macaroni – 100 g.
- Water – 1.5 liters.
- Vegetable oil – 1 tbsp.
- Ground black pepper.
- Green to taste.
Finely chop the onion, chop the garlic. Put the carrots in a casserole dish. Slice the potatoes and cut into small cubes. Wash, dry and cut the Bulgarian into cubes. Peel a squash, grate it and squeeze the juice. Drizzle the onion in the vegetable oil until golden brown, then add the carrots and garlic, sauté for 15 minutes. Add tomatoes and Bulgarian pepper, sauté for 10 minutes. Heat water in a saucepan, add potatoes and roasted vegetables. Boil everything together for 30 minutes. Then add the pasta and cook for another 15 minutes.
