Soups, borscht and other first courses must be real in every Ukrainian refrigerator. From childhood, we were told that they should be eaten – fortunately, there are many delicious and easy recipes. UNIAN tells you what they are – delicious homemade soups.

Soup with grilled cheese and chicken

- Chicken elephants – 500 g
- Made cheese – 2 packs. (180-200 g)
- Vermicelli – 0.5 cups
- Potatoes – 4 pcs .;
- Onion – 1 pc.
- Carrots – 1 pc.
- Greens – 1 pack
- Butter – 2 tbsp. L.
Wash the chicken leaf, cut it into pieces, place in a saucepan and pour cold water, put on fire. Chop the carrots and onions, slice, and sauté in a saucepan for 5-7 minutes. Wash the potatoes, cut into cubes, place in a saucepan with the meat.
Cut the boiled cheese, slice the greens. Stir for 10 minutes after adding the potatoes, then add the vermicelli and cook for another 5 minutes. Add salt and spices, then mixed cheese and herbs. Mix the broth and cook until the cheese is completely dissolved.
Bean soup without meat
For this recipe, you need to prepare the beans in advance – soak them in cold water for 10-12 hours.
- Beans – 300-400 g
- Rice – 1/4 cup
- Potatoes – 2 pcs .;
- Onion – 1 pc.
- Carrots – 1-2 pcs .;
- Wheat flour – 1 tbsp. L.
- Vegetable oil – 30 g
- Salt – to taste
- Ground pepper – 0.25 tsp (flavor)
- Fresh herbs – to taste
- Water – 3 l
Boil the beans for 50-60 minutes. Peel a squash, grate it and squeeze the juice. Peel and chop onions and carrots, wash rice. Pour the water into a saucepan, place the beans, and bring to the boil. Add half the rice, potatoes, carrots and onions. Boil for 20 minutes.
Heat vegetable oil in a frying pan, sauté onions and carrots for 7-10 minutes, then add flour, mix and cook for another 1 minute. Add the fruit to the soup, mix, salt, pepper, drain the first dish for another 2-3 minutes. Pour over chopped herbs, cover the soup with a lid and leave for 10-15 minutes.
Soup with figs and chicken
Chicken (or other meat) – 300 g
Potatoes – 3-4 pcs .;
Mills – 2 tbsp. L.
Carrots (medium size) – 1 pc.
Bulb onion (large) – 1 pc.
Eucalyptus leaf – 1-2 pcs.
Vegetable oil – 2 tbsp. L.
Parsley and / or Devi – 4-5 branches (to taste)
Pepper – 8 pcs .; (Taste)
Salt – 1 teaspoon (to taste)
Water – 1.5-2 liters
Put the meat in a saucepan, pour cold water over it, put it on the fire and cook until cooked through, removing the foam. Remove the boiled meat from the meat and cut into pieces. Rinse the sorghum in hot water, peel the potatoes, rinse and cut into cubes. Wash, dry, cut greens. Chop the onion and carrot, slice, place in a saucepan and sauté for 7-10 minutes.
Add onion, carrot, potato, sorghum, bay leaf, pepper, salt to the soup and cook for 10-15 minutes. Then set the meat aside and cook for another 15-20 minutes. Finally add the greens to the soup.

- Peas – 400 g
- Onions – 1-2 pcs .;
- Potatoes – 3 pcs .;
- Vegetable oil
- Carrots – 1 pc.
- Flour – 1 tbsp. A spoon
Wash the dried peas, cook for 2 hours until the porridge is done, do not forget to stir occasionally. Peel a squash, grate it and squeeze the juice. 5 minutes before the peas are ready, add the mashed potatoes. Finely chop the onion, slice the carrots and sauté in a saucepan for 7-10 minutes. Finally add a tablespoon of flour and mix. When the potatoes are ready, add the broth to the soup and mix. The first course of salt and pepper, garnish with fresh herbs.
